Fiocco di capra
Soft paste cheese made up of pasteurized goat’s milk, rennet, penicillium and salt.
It has an uniform, compact paste, with a color which varies from white to straw yellow. Its crust is thin, of soft consistency and white color, with characteristic molds of white penicillium color. Its taste is sweet, with a very slight bitter hint. Its flavor and smell are those strong and characteristic of goat’s-milk products.
