It’s a characteristic table cheese with a sweet, aromatic, persistent taste, with a slight bitter hint.

Its paste is compact and of white color with thin, non-homogeneous eyes, its grey crust is rough and has a fire stamping. It’s sold in circular wheels with an average weight which varies from 1,6 to 2 kg.
